I’m not sure that I can help you as I have no experience with macbooks. However the problem you have is similar to mine. You could try downloading the Linux 64bit zip file and extraction it into a folder in you home directory. Select this folder as the tool path. I think this may work as it should contain the tools SimulIDE is looking for.

I think in MacOs you need to use a folder which is "inside" the app, something like this:
/path/to/Arduino IDE.app/Contents/

Yes you are right.
You must write it by hand or copy/paste from a file explorer.

I am not suggesting that you should run the Linux program only to make the package available to SimulIDE so that it can access the tools that it requires. Sorry if that was not clear but I think that it is worth a try.
